Insalata Tricolore is an Italian Salad that uses ingredients which are the three colors of the Italian flag: green, white and red.
You can use any ingredients you like, but most typically this salad is made up of beef tomatoes, mozzarella, and avocados. It is simple to make, and should be dressed at the last minute with a good drizzle of extra virgin olive oil and balsamic vinegar.
(serves 4-6 as a starter)
2 ripe avocados
2 beef tomatoes
Mozzarella balls in salt water (total drained weight should be around 10 oz / 250g)
Fresh Basil leaves
4 Tbsp Extra Virgin Olive Oil
2 Tbsp Balsamic Vinegar
Coarse sea salt
Freshly ground black pepper
- Drain the mozzarella.
- Slice the beef tomatoes, mozzarella and avocados.
- Place them on a platter in three columns (the tomatoes down one side, the mozzarella lined up next to it, and then the avocado lined up next).
- Refrigerate for upto 24 hours if not serving immediately.
- Before serving, scatter basil leaves on top of the salad. Drizzle with Extra Virgin olive oil, balsamic vinegar, coarse sea salt and black pepper.
